Ingredients
- 3lb chicken breast, sliced thinly
- 2 Tbsp extra virgin olive oil
- 3 Tbsp fajita seasoning
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 4 scallions, chopped
- 2 Tbsp fresh cilantro, chopped
- 1 tsp fresh lime juice
- salt & pepper to taste
Mango and Cucumber Salsa
- 1 mango, peeled and chopped
- 1/2 cucumber, peeled and chopped
- 3 scallions, chopped
- 2 Tbsp fresh cilantro, chopped
- 1 lime, fresh squeezed juice
- salt & pepper, to taste
Instructions
- Preheat skillet over high heat with the oil.
- Add chicken and fajita mix, saute until the chicken is cooked through.
- Add peppers, scallions, cilantro, and lime juice. Cook an additional 3 -4 minutes.
- Salt and pepper to taste.
For the Mango and Cucumber Salsa
- Stir together all ingredients in a medium bowl.
- Serve with chicken fajitas in a flour or corn tortilla
