Fresh Mussels in a Lite White Wine and Garlic Sauce

Ingredients
- 1 Tbsp olive oil
- 1/2 cup scallions, chopped
- 3 cloves garlic, chopped
- 1lb fresh mussels
- 1 cup white wine
- 4 basil leaves, sliced
- 1/2 plum tomato, chopped
- salt, to taste
- pepper, to taste
Instructions
- Coat a saute pan with olive oil on medium heat.
- Add garlic and scallions, saute until garlic is brown.
- Add washed mussels, white wine, and simmer until mussels open, approximately 5-10 minutes.
- Add tomatoes, basil, and salt and pepper to taste. Simmer for 5 minutes.
- Add your favorite pasta and steamed vegetable for a balanced meal and enjoy!
