Nut Free Gingerbread Granola
Tis the season of gingerbread! Whole grain, natural sweetened, warm spices and nut free granola! Enjoy topped on your favorite yogurt or smoothie.
Ingredients
- 3 cups Old Fashioned Oats
- 2 Tbsp chia seeds
- 1 cup unsweetened coconut flakes
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1/4 tsp all spice
- 1 tsp ground ginger
- 2 Tbsp coconut oil
- 1/4 cup molasses
- 1/4 cup pure maple syrup
- 2 tsp vanilla
Instructions
- Preheat oven to 300F degrees.
- Line large sheet pan with parchment paper.
- In a large bowl, mix together the oats, chia seeds, coconut flakes, cinnamon, nutmeg, cloves, all spice, and ginger.
- In a medium saucepan, heat over medium heat the coconut oil, molasses, syrup, and vanilla.
- Stir heated ingredients with dry mixture.
- Spread on sheet pan.
- Cook for 30 minutes, while flipping the granola with a large spatula every 10 minutes.
- Cool completely and store in an airtight container.
