Chicken Fajitas with Mango Cucumber Salsa by siovanni | Dec 8, 2017 | Uncategorized | 0 comments Skillet Chicken Fajitas with Mango Cucumber Salsa Category: Uncategorized Ingredients 3lb chicken breast, sliced thinly 2 Tbsp extra virgin olive oil 3 Tbsp fajita seasoning 1 red pepper, thinly sliced 1 green pepper, thinly sliced 4 scallions, chopped 2 Tbsp fresh cilantro, chopped 1 tsp fresh lime juice salt & pepper to taste Mango and Cucumber Salsa 1 mango, peeled and chopped 1/2 cucumber, peeled and chopped 3 scallions, chopped 2 Tbsp fresh cilantro, chopped 1 lime, fresh squeezed juice salt & pepper, to taste Instructions Preheat skillet over high heat with the oil. Add chicken and fajita mix, saute until the chicken is cooked through. Add peppers, scallions, cilantro, and lime juice. Cook an additional 3 -4 minutes. Salt and pepper to taste. For the Mango and Cucumber Salsa Stir together all ingredients in a medium bowl.
