Ingredients 1 Tbsp olive oil 1/2 cup scallions, chopped 3 cloves garlic, chopped 1lb fresh mussels 1 cup white wine 4 basil leaves, sliced 1/2 plum tomato, chopped salt, to taste pepper, to taste Instructions Coat a saute pan with olive oil on medium heat. Add garlic and scallions, saute until garlic is brown. Add washed mussels, white wine, and simmer until mussels open, approximately 5-10 minutes. Add tomatoes, basil, and salt and pepper to taste.
