Fresh Mussels in a Lite White Wine and Garlic Sauce

A simple and healthy way to cook mussels, and perhaps the most satisfying! Why wait to go out for seafood? With an easy dish like this, you can enjoy seafood in the comfort of your own home!

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup scallions, chopped
  • 3 cloves garlic, chopped
  • 1lb fresh mussels
  • 1 cup white wine
  • 4 basil leaves, sliced
  • 1/2 plum tomato, chopped
  • salt, to taste
  • pepper, to taste

Instructions

  • Coat a saute pan with olive oil on medium heat.
  • Add garlic and scallions, saute until garlic is brown.
  • Add washed mussels, white wine, and simmer until mussels open, approximately 5-10 minutes.
  • Add tomatoes, basil, and salt and pepper to taste. Simmer for 5 minutes.
  • Add your favorite pasta and steamed vegetable for a balanced meal and enjoy!
